If you are looking for a simple recipe then Marinated Crock Pot Chicken is the one you will want to try.  You use a whole chicken and marinate it for a few hours then place in the crock pot and it does the rest.  How simple can it get!   The flavors of the marinade really penetrate the chicken and you can then thicken the liquid in the base of the crock pot for a lovely sauce.   I hope you like this recipe as I do.

1 medium size whole chicken
For the marinade:
1/2 cup Teriyaki marinade sauce
2 teas chopped rosemary
1 teas honey
2 tabs lemon juice
1 clove garlic
rest of lemon after juicing

Combine all ingredients in a bowl except the garlic and the rest of the lemon (not used for the juice)  and stir well.   Place the garlic and the lemon in the chicken cavity and then pour the marinade over the chicken.   Place in refrigerator for a few hours or overnight, basting with the marinade occasionally.  Place into the base of the crock pot and cook on high for about 4 hours.  You can baste it with the juices about twice during cooking, trying not to leave the lid off too long.  Remove the chicken and cut into serving pieces.  Thicken the juices with a little flour mixed with water to make a sauce to pour over the chicken.  Serve with rice or potatoes and vegetables.  Serves 4.

This crock pot recipe for Stuffed Peppers with Beef and Rice is one I used to make many years ago and forgot all about it until recently.  I originally had changed it slightly from one of the recipes that came with the crock pot.

My tastes have changed a little since then again and I like my food a bit spicier now so amend this recipe to your own tastes.  You can spice up the filling a bit more if you like with fresh chopped chili and/or other herbs.  You could also add a couple of tablespoons of sweet chili sauce to the recipe but then reduce the wine.

Stuffed Peppers with Beef and Rice

4 - 6 bell peppers (capsicum)
2 med onions, chopped finely
2 cloves garlic, chopped
1 lb (500g) minced beef
salt and pepper
1/4 cup white wine or stock
1 large ripe tomato chopped or canned tomato
1 cup cooked rice
1 cup stock or tomato juice (from canned tomato)
4 - 6 pieces of bacon (one for each pepper)
1/4 cup corn kernels (cooked or canned)
handful of basil chopped
Grated cheese (optional)stuffed pepper with salad

Turn crock pot on to high and spray with non stick spray.  See how many peppers will fit into your crock pot.  Take the top off the peppers and seed them, then put aside.  Combine onions, garlic, beef, corn and salt and pepper.  Add the rice and the basil and fill the peppers, pressing the mixture into each.  Top with a piece of bacon.   Pour over the stock (or tomato juice).  Cover the crock pot and cook for 3 -4 hours.  Top with grated cheese or add just before serving.  You can serve these stuffed peppers with salad or  steamed vegetables as a meal or serve alone as an entree.

If you have any left over mixture you can roll it into balls, coat with breadcrumbs and fry.  You can heat and serve these as a snack or with fried eggs for breakfast.  I used fairly large peppers and could only fit 4 in my crock pot.  I think they are nicer though a bit smaller and then you will fit more in especially if you use an oval crock pot.   I hope you enjoy this crock pot recipe for Stuffed Peppers with Beef and Rice.

potatoesHere's an easy recipe for your lunch or dinner today.

You will need:
8 potatoes (medium sized)
Small amount of oil
Cooking salt
Foil

Brush the potatoes with oil and prick them all over (don't overlook this step).  Rub them with salt then wrap them in foil.  I actually use my hands with the oil then the salt but you can use a pastry brush. Turn on the crock pot to low and place the wrapped potatoes on the base.  No liquid is needed so don't add any.  Cover and cook for 8 hours.  If you decide to use small potatoes then reduce the cooking time only by about an hour.

I had left over chili con carne in my freezer so I used that as the topping that day.   I sprinkled some shredded cheese as well over the top.  You can use whatever you have in the pantry, fridge or freezer for toppings or you can try one of the ones below.

Here are 6 other toppings you can use:
1. Shredded cheese and salsa
2. Chopped Onions, bacon and tomatoes
3. Cream cheese and chopped chives
4. Pineapple, chopped ham and shredded cheese
6. Tuna, corn and mayo

Allow at least 2 per person. You can serve the topped potatoes with salad if you wish. This dish makes a good weekend lunch or Sunday night dinner. Cooking these baked potatoes in the crock pot is so easy.

osso-bucco-with-olives-1I love the taste of Kalamata olives and sun dried tomatoes so this dish was always going to be a favorite.  Cooking the Osso Bucco in the crock pot ensures that the veal is tender and tasty.

If you don't like olives you can leave them out but maybe give them a try and you might be surprised at the wonderful taste it gives this dish.  This is another crock pot meal ideal for Pot Luck parties.

Osso Bucco with olives

6 pieces of veal osso bucco
flour mixed with salt and pepper
2 tabs oil
1 clove garlic
2 tabs butter
1 medium onion, chopped
1 carrot, chopped
1 stick celery, chopped
1 can tomatoes
1 tab tomato paste
1/2 cup red wine
1 cup beef stock
1/4 cup semi dried tomatoes & olives
1 tab lemon juice
sprinkle of chopped Italian parsley

Coat meat in the flour and heat the oil in a large heavy pan and brown the meat for a few minutes each side.  Transfer to the crock pot.  Add onion and garlic to the pan cook for 1 minute then add the carrot and celery and cook for another 2 minutes.  Add the tomatoes, puree, red wine and stock.  Stir thoroughly until blended well and pour over the meat in the crock pot.

Cook on low for approximately 6 hours.  Add the sun dried tomatoes and olives in the last hour.  Stir in the lemon juice and thicken the gravy if needed before serving.  Serve with mashed potato or polenta.

cognacapricots3This dessert recipe for Decadent Cognac Apricots is nice served hot or cold.  It has only three steps and uses the microwave and the crock pot slow cooker.

You could substitute peaches if you like them better than apricots and use brandy instead of cognac.  If you don't like the taste of cognac or brandy then you can add more orange juice but I encourage you to use the cognac for a wonderful taste sensation and to make the dessert a little more special.

Decadent Cognac Apricots
1 tab brown sugar
1 cup water
2 teas honey
1/2 teas each of ground cinnamon and nutmeg
1 clove
1 tab each of lemon juice and orange juice
1 tab cognac (or brandy)
2 strips orange rind
29 oz (825 g) canned apricot halves

In a microwave jug dissolve the brown sugar and water for approximately 30 seconds.  Add the honey, cinnamon, nutmeg, cloves, juices and cognac.  Microwave another minute.  Stir well and add to crock pot base.  Add the drained apricots and stir through gently, trying not to break them up.  Cook on low for 2 hours and let cool in the crock pot.

beefwithredwineThis Beef and Red Wine Stew recipe is fairly easy to make and if you like big serves then it will feed 2 people.  It's not as easy finding recipes for two for the slow cooker so finding this one was like gold. You can vary it by adding mushrooms or bell peppers.  You can also swap the onions with leeks for a slightly different texture and taste.

Crock Pot Slow Cooker Beef with Red Wine Stew

1 lb (1/2 kg) steak cut into bite size pieces
flour to coat steak
2 tabs olive oil
1/2 cup chopped carrots
1 medium onion chopped
1 large clove garlic crushed
1 tab each chopped chives and parsley
1 small bay leaf
1 cup red wine of your choice
1 cup beef stock cube
1 tab instant gravy mix to thicken if required but recommended

Coat meat in flour and brown meat in oil.  Remove and put aside.  Add to the pan the onions, carrots and herbs and toss until softened a little.  Remove the vegetables and put into the base of the slow cooker. Place the meat on top of the vegetables.

Add the wine and stock to the pan and mix well together as this then combines the juices from the pan as well.  Pour into the crock pot slow cooker over the meat and vegetables. Put the lid on and cook on low for 6 hours.  Thicken with the instant gravy mix combined with a little water if you think the stew is too thin.

Serves 2 large servings or 3 medium ones.  I serve it with sweet potato mash but you can serve with rice or just some of your favorite crusty bread.  Get out your crock pot slow cooker and start cooking.

apple-lemon-dessertThis apple and lemon sponge dessert recipe is perfect for pot luck parties and entertaining at home.  It is also an easy crock pot recipe even for the beginner cook so if you are looking for an easy dessert this is it.  You can cook and serve this dessert straight from your crock pot slow cooker or you can insert another dish into the pot and remove when cooked.  I cheat a little by using a cake mix for the sponge but if you prefer you can make your own.

Easy Crock Pot Apple and Lemon Sponge Dessert

1 packet butter cake mix
15 oz (440g) canned apple slices
3 tabs sultanas
1 tab grated lemon rind
2 tabs honey warmed
1 tab lemon juice
icing sugar (optional)

You need to make up the cake mix as per the directions on the packet.  They are all different so please follow this step correctly.  Place all the rest of the ingredients except the icing sugar into a large jug or bowl and mix together and combine well.  Spread the mixture over the greased base of the crock bot bowl or you can use Slow Cooker Liners for no mess afterward.

Spoon over the cake mixture and place several sheets of paper towel over the top, making sure that the towel doesn't touch the mixture.  Place the lid on the crock pot and turn to high and cook for 3 hours approximately.  Check to see if cooked as sponge will spring back at a touch.   Serve with a dusting of icing sugar and a dab of cream or ice cream.

Try this easy crock pot recipe and let me know what you think about the taste as I'm sure you will agree its pleasantly different, a bit of a twist on the standard apple sponge.  This is my favorite dessert recipe at the moment for the family or when I'm entertaining.

banana-cakeThis is an easy and simple crock pot banana cake recipe and you should have all the ingredients you need in your pantry or refrigerator.  I used my small crock pot but you can use a cake pan and place that in the crock pot if you wish.  The advantage of using the crock pot instead of the oven is that you can be cooking the main course in the oven and the dessert in the crock pot at the same time and the crock pot does not heat the kitchen up in summer either.

Simple Banana Cake Recipe

1/4 cup butter
3/4 cup sugar
1  3/4 cups Self Raising Flour
2 medium to large ripe bananas, mashed
2 eggs
3 - 4 tabs milk

Cream butter and sugar, add eggs and bananas.  Mix in flour and milk alternatively.  You may not need all the milk if you use large bananas.  Pour into a greased small crock pot or a 7-8 inch cake pan (place in crock pot).  You can also use Slow Cooker Liners to avoid any mess. Cover mixture with several pieces of paper towel and place on the lid securely.  Cook on high for 1 to 1.5 hours.  Check after an hour as my last cake cooked in that time.  This cake rises well and is quite moist.

banana-cake1Turn off the crock and let stand for about 10 minutes then turn out.  Lightly run a knife around the edge to release.  If using the cake pan do the same thing but remove the pan from the crock pot immediately and allow the 10 minutes to cool on the bench.   You can dust some icing sugar over the cake or ice with lemon icing or cream cheese frosting.  If using the frosting, keep leftovers in the refrigerator.

If serving as a dessert I like to place whole pecans on top of the mixture before cooking.  Use small ones or they will sink.  Alternatively you can mix them through before putting the mixture into the crock pot slow cooker.  Serve warm with ice cream or cream.

Looking for an easy crock pot meal?  Then this Beef  'n Beer Casserole recipe is for you.  This is  a recipe where you just put all the ingredients into the crock pot slow cooker and stir it occasionally during cooking.  Nothing really can go wrong with it, so if you are a novice cook this is the beef recipe for you.   Put it up and put it on in the morning and your dinner is cooked when you come home from work.

Beef  'n Beer Casserole

2.5lbs (1kg)of topside other steak, cut into chunks
1 cup beef stock
3/4 cup beer
3 tabs tomato puree
1 tab minced garlic
1 carrot and onion chopped
1 stick celery chopped
bouquet garni *
sprinkle of oregano
Place all ingredients into crock pot and cook on low for 8 - 10 hours. Stir once or twice only and thicken with a little flour or gravy mix 15 minutes before serving. Remove bouquet garni and serve with vegetables and rice or mashed potato.  This beef n' beer casserole serves 4 servings.

As there are only 2 of us I freeze half the quantity and have it for another meal later in the week.  If I am in a hurry I can then just defrost it, heat and serve with crusty bread for a quick meal.

* bouquet garni - I make my own by tying together a bay leaf, some parsley stalks and a sprig of thyme.

This recipe for prunes in port wine is very easy and makes a nice simple dessert.  Its a very old recipe that was given to me about 20 years ago.  I have adapted it to the crock pot which was very easy.

I love prunes right out of the bag but with the combination of port it makes a nice light dessert.  Its not everyone's idea of a great dessert but I like it and its different. Just remember to not eat too many at once or you may get a stomach ache.  My son learned the hard way that when he was a little boy.  He told me the black apricots made him feel sick.  hehe

Prunes in Port Wineprunesinport1

1/2 lb (250g) dessert prunes
2 cloves
2 slices of  fresh orange and a piece of orange rind
1 tab sugar
1  small cinnamon stick
3/4 cup water
1/4 cup port wine
Place all ingredients in a small crock pot.  Cover and cook on low for 4 hours.  Stir light once during cooking but be careful not to break up the fruit. Serve hot with custard or cold with cream.  Serves 4.  You can double the recipe for a dinner party.

There are some great old recipes out there that you or your mother/grandmother used to make and they are adaptable to the crock pot usually quite easily.  Why not dig out some of your own and try them yourself this week.
