I like this easy crock pot recipe as it is one that has only 4 ingredients in it. Cake cooked in the CROCK POT is moist and can be served with coffee or tea or as a dessert served warm with ice cream or cream. A quick and easy icing is to drop chocolate chips and peanut butter on the warm cake and leave a minute or two then swirl them together with a knife.

Chocolate Peanut Butter Cake

2 cups of chocolate cake mix or muffin mix *

3/4 cup of water

1/3 cup smooth peanut butter

1/2 cup chopped nuts or chocolate chips

1 egg (optional)

Combine all ingredients in a bowl and mix well for 2 minutes. Pour batter into greased crock pot or a cake tin that will fit in your crock pot. Cover with paper towels and cover with lid. Cook on high for 1 1/2 to 2 hours.

*Look at the packet and try and pick a mix that uses only 1 egg if possible. I added the egg with the muffin mix and the chocolate chips. If the mixture looks too thick add a little more water.

If you are looking for a good recipe book for the crock pot then you cant go past Crock-Pot Cook Book - Best Loved Recipes

Boiled fruit cake is easy to make and tastes good too and with the addition of some glace pineapple it adds to the sweet taste of the cake.

I love fruit cake and this recipe is one of the simplest ones around. Boiled fruit cake is easy to make and tastes good too and with the addition of some glace pineapple it adds to the sweet taste of the cake.

This cake may not look it but I cooked it in a cake tin in the slow cooker. You get a nice cake and keep the kitchen cool as well. I hope you enjoy it.

NOTE: For a Christmas cake version make the amendments in orange below.

Boiled Fruit Cake with Pineapple

4 oz (125g) butter

1 cup sugar

1 cup water (add 2 tabs brandy to make up the cup)

16 oz (450g) mixed fruit (add extra chopped cherries to make up the 16 oz)

100g glace pineapple

1 tsp nutmeg

1 tsp bi carb soda

1 cup self raising flour

1 cup plain flour

2 eggs, beaten

Pineapple pieces, glace cherry halves and pecans to top cake (optional but recommended

Place butter, sugar, water, mixed fruit, pineapple, nutmeg and soda into a large saucepan. Stir until boiling and allow to cool for at least 15 - 20 minutes. This is an important step otherwise when you add the eggs they will cook. Now add the beaten eggs and stir well. Sift the flours and add them to the other ingredients in the saucepan making sure to mix thoroughly.

Spoon into a round slow cooker base or pour into a greased cake tin that fits into your slow cooker (approximately 8 in or 20cm). I like to also line the pan if using the cake tin. You can press extra pineapple pieces and pecans on top of the cake if you aren't icing it.

Cover with two layers of paper towel as this will absorb any extra moisture on the top of the cake. Cook on high for 2 - 2.5 hours. Let stand in crock pot for 20 minutes before turning out onto cake rack to cool completely.

I spread a small amount of pineapple jam with a pastry brush over the cake while still hot to add a nice glaze but that is optional. You can also ice the cake if you like. This cake comes out nice and high and tastes even better than it looks. Get out your slow cooker now!

This is an easy and simple crock pot banana cake recipe and you should have all the ingredients in your pantry or refrigerator.

This is an easy and simple crock pot banana cake recipe and you should have all the ingredients you need in your pantry or refrigerator. I used my small crock pot but you can use a cake pan and place that in the crock pot if you wish. The advantage of using the crock pot instead of the oven is that you can be cooking the main course in the oven and the dessert in the crock pot at the same time and the crock pot does not heat the kitchen up in summer either.

Simple Banana Cake Recipe

1/4 cup butter

3/4 cup sugar

1 3/4 cups Self Raising Flour

2 medium to large ripe bananas, mashed

2 eggs

3 - 4 tabs milk

Cream butter and sugar, add eggs and bananas. Mix in flour and milk alternatively. You may not need all the milk if you use large bananas. Pour into a greased small crock pot or a 7-8 inch cake pan (place in crock pot). You can also use Slow Cooker Liners to avoid any mess. Cover mixture with several pieces of paper towel and place on the lid securely. Cook on high for 1 to 1.5 hours. Check after an hour as my last cake cooked in that time. This cake rises well and is quite moist.

Turn off the crock and let stand for about 10 minutes then turn out. Lightly run a knife around the edge to release. If using the cake pan do the same thing but remove the pan from the crock pot immediately and allow the 10 minutes to cool on the bench. You can dust some icing sugar over the cake or ice with lemon icing or cream cheese frosting. If using the frosting, keep leftovers in the refrigerator.

If serving as a dessert I like to place whole pecans on top of the mixture before cooking. Use small ones or they will sink. Alternatively you can mix them through before putting the mixture into the crock pot slow cooker. Serve warm with ice cream or cream.
