I love this recipe called Low Fat Orange Chicken Fillets and I have adapted it for the crock pot.  The recipe has changed slightly over the years as my tastes have changed so don't hesitate to adapt it to yours.  Its doesn't take as long to cook as other crock pot recipes  so you can turn it on after lunchtime and have a delicious meal that night.  I prefer though to store it in the refrigerator and eat it the next night so I make it on Sunday for Monday night's meal.

Low Fat Orange Chicken Filletsorangechickenfillets

4 chicken fillets
1/2 cup orange juice
1/4 cup sherry
1/2 teasp thyme
1 clove garlic - crushed
1 tab marmalade
1 teasp brown sugar
1 teasp soy sauce
pinch of five spice and pepper to taste
Combine all ingredients except for the chicken fillets and mix well.  Dip the chicken in the sauce and then lay the fillets in the crock pot.   Pour over the remaining sauce and cook on low for 4 - 5  hours.  Sauce can be thickened with cornflour mixed with a little water.  Add this in the last 15 minutes or you can thicken when you remove the chicken from the bowl.  Serve with cooked white rice or rice medley.
