You have been asked to a Potluck Party and you can’t cook. What do you do? If you own a crock pot you have the problem solved. You need to prepare the dish in advance and be able to carry it to the party so the crock pot is perfect for this.
Traditional dishes like casseroles and chili are good choices. Dishes don’t have to be fancy and the recipe doesn’t need to be complicated. Mark your crock pot slow cooker
with your name so you can identify it afterward. You might be surprised how many people will bring them and then you will know which one is yours when it has been cleaned.
A great easy recipe for a non cook and one that has very little preparation time is this chili one below:
Crock pot chili 
16 oz can kidney beans, drained well
2 cans (14 oz) tomatoes
2 pounds ground beef
2 medium onions, chopped finely
1 green pepper, coarsely chopped
2 gloves garlic, crushed
3 tabs chilli power
1 teasp pepper
1 teasp cumin
salt to taste
Put all the ingredients in the crock pot in the order listed. Stir once, cover and cook on low for 10 hours or high for 5 hours. Serve with shredded cheddar cheese, corn bread or corn chips.
Tip: Take copies of the recipe with you so others can check the ingredients if they have allergies. They will love this dish so much they will want a copy of it and it says to others 'hey I really can cook' (hehe).

There are lots of great crock pot desserts recipes to try but one of my mother's favorite recipes that she has made in winter for as long as I can remember is rice pudding. I have adapted her recipe for the crock pot slow cooker
. A 3.5 quart size crock pot would be ideal for this recipe but you can use a larger one, just cook for a little less time.
Rice Pudding
2 1/2 cups cooked rice
1 3/4 cups milk
4 tabs brown sugar
2 tabs soft butter
1/2 teasp vanilla essence
1/2 teasp ground cinnamon
1/2 teasp ground nutmeg
3 large eggs, whisked well
1/2 cup sultanas
Combine all ingredients and mix well. Pour into the buttered base of the crock pot and stir. Put on the lid and cook on high for 1.5 - 2 hours. Stir again once in the first half hour.
Serve with stewed or canned fruit and ice cream.

This recipe for prunes in port wine is very easy and makes a nice simple dessert. Its a very old recipe that was given to me about 20 years ago. I have adapted it to the crock pot
which was very easy.
I love prunes right out of the bag but with the combination of port it makes a nice light dessert. Its not everyone's idea of a great dessert but I like it and its different. Just remember to not eat too many at once or you may get a stomach ache. My son learned the hard way that when he was a little boy. He told me the black apricots made him feel sick. hehe
Prunes in Port Wine
1/2 lb (250g) dessert prunes
2 cloves
2 slices of fresh orange and a piece of orange rind
1 tab sugar
1 small cinnamon stick
3/4 cup water
1/4 cup port wine
Place all ingredients in a small crock pot. Cover and cook on low for 4 hours. Stir light once during cooking but be careful not to break up the fruit. Serve hot with custard or cold with cream. Serves 4. You can double the recipe for a dinner party.
There are some great old recipes out there that you or your mother/grandmother used to make and they are adaptable to the crock pot usually quite easily. Why not dig out some of your own and try them yourself this week.

The recipe below for Lamb shank and butter bean soup is one that was given to me by my friend Karen from Camden. I have adapted it for the crock pot and I am sure you will love it like we do. It is a thick soup so it is a meal in itself and makes enough soup to feed a family of six.
There is a little preparation with the browning of the leek and the lamb but then its a quick and easy recipe to make in the crock pot. I make it on Saturday and there is enough to have again and I must admit that it is a soup that takes even better the next day. Try it and see for yourself.

This dessert recipe for Decadent Cognac Apricots is nice served hot or cold. It has only three steps and uses the microwave and the crock pot slow cooker

You could substitute peaches if you like them better than apricots and use brandy instead of cognac. If you don't like the taste of cognac or brandy then you can add more orange juice but I encourage you to use the cognac for a wonderful taste sensation and to make the dessert a little more special.
Decadent Cognac Apricots
1 tab brown sugar
1 cup water
2 teas honey
1/2 teas each of ground cinnamon and nutmeg
1 clove
1 tab each of lemon juice and orange juice
1 tab cognac (or brandy)
2 strips orange rind
29 oz (825 g) canned apricot halves
In a microwave jug dissolve the brown sugar and water for approximately 30 seconds. Add the honey, cinnamon, nutmeg, cloves, juices and cognac. Microwave another minute. Stir well and add to crock pot base. Add the drained apricots and stir through gently, trying not to break them up. Cook on low for 2 hours and let cool in the crock pot

In winter my crock pot has a partner. They are always out together. They go together like bread and jam and by saying that it's almost correct because it is my BREADMAKER
. They are both such time savers and really if I didn't have the breadmaker then I wouldn't try and make it myself. You can make bread in the crock pot too but as I have the breadmaker I can do the whole meal at once.
I love to make soups in winter and fresh hot bread is just the ultimate accompaniment. I can set and forget both of them, but I must admit the bread doesn't take as long to cook unless I set the Programmable Crock Pot
for the time the bread will be ready. I then have both cooked at the same time and ready to serve. The smells coming out of that kitchen are just hard to explain, especially when its a week day and I return home to a house smelling like heaven.

If you are looking for a simple recipe then Marinated Crock Pot Chicken is the one you will want to try. You use a whole chicken and marinate it for a few hours then place in the crock pot and it does the rest. How simple can it get! The flavors of the marinade really penetrate the chicken and you can then thicken the liquid in the base of the crock pot for a lovely sauce. I hope you like this recipe as I do.
Marinated Crock Pot Chicken
1 medium size whole chicken
For the marinade:
1/2 cup Teriyaki marinade sauce
2 teas chopped rosemary
1 teas honey
2 tabs lemon juice
1 clove garlic
rest of lemon after juicing
Combine all ingredients in a bowl except the garlic and the rest of the lemon (not used for the juice) and stir well. Place the garlic and the lemon in the chicken cavity and then pour the marinade over the chicken. Place in refrigerator for a few hours or overnight, basting with the marinade occasionally. Place into the base of the crock pot and cook on high for about 4 hours. You can baste it with the juices about twice during cooking, trying not to leave the lid off too long. Remove the chicken and cut into serving pieces. Thicken the juices with a little flour mixed with water to make a sauce to pour over the chicken. Serve with rice or potatoes and vegetables. Serves 4.

This recipe is good for couples or a single person so that you can have at least 2 meals from it, one to eat and one to freeze. I like vegetarian meals and I love curry so this combines the two. Cooking it all in the crock pot slow cooker
while I am working or doing other things is a lifesaver on busy days.
I have shared this recipe with my girlfriends over the years as I have found women especially love this recipe and it is one anyone, even a novice cook, can make.
Paulineh's Vegetarian Curry
2 onions, chopped roughly
2 tabs oil
1 clove garlic, crushed
2 tabs cornflour
2 - 3 tabs curry paste
2.5 cups vegetable stock
cubes or small chunks of your favorite vegetables*
Heat the oil and add the onion, cook until soft then add the flour and then the curry paste. Cook for a further minute, stirring all the time, then add most of the stock. Continue to stir until sauce thickens. If too thick use the rest of the stock. Add the vegetables and stir through, then add it all to the crock pot slow cooker.
Cook for 6 hours on low (check to see vegetables are cooked but are not falling apart). Serve with rice or poppadoms. Serves 4.
Notes: * I haven't specified how much vegetables you should use as this will vary with what the vegetables are and what size you cut them into . As a guide I used about 5 cups.
Variations: You can add a small can tomatoes, chick peas or some frozen peas in the last 15 minutes before serving. You can also add about 1/2 cup coconut milk for a different taste and add this just before serving.

I love crock pot dinners as you now and it has surprised me to realize that it has only been in the last few years that slow cooking has become so popular again.
I started cooking in my crock pot in the 1970s, yes I am that old I hear you thinking. I put it away again but got it out when I found it again when I moved house. I was working back then as I am now and I am still singing the praise of slow cooking.
In the last 2 years I have noticed in grocery stores the emergence of crock pot/slow cooker mixes. You add your meat or chicken and one or two other ingredients with the packet mix and you have your crock pot dinner ready to cook.
I have used them once or twice when I was really busy but prefer to work from one of my own recipes as then I know exactly what is in it that I am serving my family. Their popularity though tells me that there is a market now that wasn't there or big enough before.
People have discovered the great taste that slow cooking brings to the dish and how simple it is to make. Another benefit is the small amount of clean up required. If you are working then you know you want to relax as much as you can when you come home and not be in the kitchen.
How nice it is to know that dinner is cooking itself while you are at work or away from home all day. I am glad that others are now finding how convenient crock pot dinners are and how great they taste too.
If you haven't joined the crock pot revolution then now is the time! Crock pot dinners will change the way you cook and how you spend your time when you are home from a hard day's work.

Cooking on a budget is more often easier than you think. Here are a few tips for cheap easy meals using your slow cooker. Don't forget to ask your mother and grandmother for their tips too as they had to be experts in the depression years.
Buy in bulk or when on special
You don't have to be a big family to benefit but you will need a big enough freezer or pantry cupboard to cope with this method of cooking on a budget. This includes meat and vegetables and make sure to prepare them properly for the freezer or for bottling and canning. When you find groceries you use often ''on special' then buy them up too. Items like canned tomatoes and beans are two that I stock up on.
